The #3 Sandwich

Today Emily from A Nutritionist Eats is sharing her recipe for today’s delicious looking sandwich!

This is the kind of sandwich that converts a person like me into the delicious world of sandwiches. I didn’t mind them, but it wasn’t something I got excited to eat. I usually found them to be kind of boring - something reserved only for uninspired lunches. But then I had this sandwich. And it changed everything.

We were flying back to Minneapolis from Los Angeles, and my cousins had suggested picking up “liquor store sandwiches” for the plane ride home. So we visited Larchmont Village Wine Spirits & Cheese, which actually has quite the reputation for their sandwiches. The menu is small, only about 6 sandwiches or so, but all using the highest quality ingredients.

The sandwich I had - the # 3 - showed me that a sandwich need not be fussy, or complicated, just made with good ingredients and a lot of flavor.
And now, I’m a sandwich person.

Spanish Sandwich

  • 2 Tbsp mayo or light mayo
  • 1 tsp smoked paprika
  • 1/2 french loaf or baguette, sliced in half
  • olive oil and balsamic vinegar
  • 2 oz soppresta
  • 2 oz manchego cheese
  • 2 cups arugula
  1. Whisk together mayo and paprika. Set aside.
  2. Slice baguette down the side. Drizzle one side with olive oil and balsamic vinegar. 
  3. Spread paprika mayo on other side. 
  4. Layer on cheese, meat and arugula. 
  5. Press sandwich together.
