Salted Toffee
“This is my perfect food.” True quote, and it’s not from me, my husband, or my mom.
This is indeed one of the most perfect snack-desserts I have ever tried. I’ve named it Salted Toffee, but I don’t even like calling it toffee, because people who don’t like toffee are afraid to try it. And really, you can’t know how perfect it is until you take that...
Thai Chicken Salad
It actually all started with a pizza. A delicious Thai Chicken Pizza.
And in an effort to save my appetite for Christmas Eve dinner, the Thai Chicken Pizza ingredients morphed themselves into a Thai Chicken Salad.
And it was a beautiful thing.
I would eat this any day of the week, and for any length of time, but it’s especially perfect for post-Christmas eating.
My reasoning...
Gingerbread with Lemon Icing
Mmmmm. Can you smell the ginger, cloves, cinnamon, and orange wafting through the house? Better question - can you resist eating the whole mini-loaf in one sitting?
Me either.
One of the glories of this bread is that it really could be eaten around the clock. Breakfast? Check. Snack? Check. Dessert? Check.
Dinner? Check. (Yes, he really did.)
As you can see, we dug in even before...
Happy Birthday, Mom!
Tucker. I love you.
Grandpa Bernie, I love you, too.
Chips and guacamole, you know I love you.
Dad and Rigo, how could I not love you?
Steph, feel the love. Yep.
And, mom…
Yes, you.
Thanks for everything you are. I love you! Happy Birthday!
Minty Chocolate Oreo Truffles
These have got to be one of the cutest Christmas cookies around.
Although they aren’t really cookies; they’re more like “truffles”. And I like truffles, a lot.
I also like easy.
Would you believe me if I told you there are only 3 ingredients at work here? Well, ‘tis the season for believing.
Get your Oreos, cream cheese, and almond bark and let’s...
Pomegranate Orange Muffins
I find that the best thing for me to do during a blizzard is bake.
Shovel? Rescue my car? Nah.
Bake tasty muffins? Wrap presents? Listen to Christmas music? That’s more my style.
We woke up to a blanket of white. Or, several thick blankets. We are expecting up to 16 inches here in Minnesota. Take a peek.
Because I like to bake on Saturdays, and because we were pretty much stuck in...
Spicy African Peanut Stew
Oh my goodness.
That’s what I thought when I first tasted this spicy, warm, comforting stew.
Oh my goodness is also what I thought when I peeked into the crock pot last night only to find that after sitting on high for 1 hour, the “stew” was not even lukewarm. Nooo!
My disappointment for not getting to eat my stew last night was fixed quickly with a frozen pepperoni...
Peanut Butter Blossoms
With or without the melty chocolate tops, Peanut Butter Blossoms are a Christmas staple. I happen to live with a wonderfully sweet cookie monster, which is perfect for me, because I can make lots of cookies “for him”.
Wink, wink.
This particular day was actually dedicated to decorating the house, but obviously Christmas decorating necessitates some cozy Christmas cookies!
Since this...
Caramel Corn
I’m easily distracted.
In my own defense, did you really think I could keep up with risotto week when I had mountains of this heavenly golden treasure laying around the house? Like I said, I’m easily distracted.
I’m proud to say that, while I haven’t been making much risotto…. I have been making more interesting things, like this heavenly Caramel Corn.
The kind made with puffcorn. ...
